Toad in the hole

  1. For the batter, sieve the flour into a bowl and season with salt and pepper. Make a well in the middle and break in the eggs. Whisk the eggs slowly into the flour. Once combined, pour in the milk while you whisk so that you have a smooth, lump-free batter the consistency of double cream.
  2. Rest batter for 30mins at least.
  3. Oven at 235. Oil into the dish with the sausages and cook for 10 mins
  4. Open oven and pour batter over sausages and close door as quickly as possible.
  5. Turn temp down to 200. Cook for 35min.
  6. Chop veg and steam for 5 mins. Put carrots into the bottom of the steamer, then Broc, then top with cabbage or leafy greens
  7. Use steaming water for instant gravy.
