Scottish Griddle Scones

  1. If you are making the buttermilk, add the vinegar to the milk and let curdle whilst you ready the other ingredients
  2. Small dice the butter if it is not already at room temp, then cream with sugar.
  3. Add egg and combine.
  4. Add milk, flour, salt and fruit, and mix.
  5. This makes a sticky dough, so turn out onto floured surface or tray so you can roll it around in flour to make ti easier to work with.
  6. Once it is roughly a ball, cut it in half.
  7. Shape each half into an approximate 4inch round, incorporating flour as needed so it is not too sticky and unworkable
  8. Cut each round into quarters.
  9. Heat a pan to medium, add the quarters and let brown on one side. Turn to other side.
  10. The cooked sides may look slightly blackened rather than just brown - this is fine.
  11. When both sides are finished, you can also turn them on their edges if you think they look raw in the centre still.
  12. Put onto a cooling rack and eat when ready with butter!
