- If you are making the buttermilk, add the vinegar to the milk and let curdle whilst you ready the other ingredients
- Small dice the butter if it is not already at room temp, then cream with sugar.
- Add egg and combine.
- Add milk, flour, salt and fruit, and mix.
- This makes a sticky dough, so turn out onto floured surface or tray so you can roll it around in flour to make ti easier to work with.
- Once it is roughly a ball, cut it in half.
- Shape each half into an approximate 4inch round, incorporating flour as needed so it is not too sticky and unworkable
- Cut each round into quarters.
- Heat a pan to medium, add the quarters and let brown on one side. Turn to other side.
- The cooked sides may look slightly blackened rather than just brown - this is fine.
- When both sides are finished, you can also turn them on their edges if you think they look raw in the centre still.
- Put onto a cooling rack and eat when ready with butter!
