Leek and Potato Soup
This deliciously simple soup serves about 3 people.
- Finely slice leeks and potatoes
- Soften leeks and potatos in saucepan on low heat with butter
- Add chicken stock, curry powder and pepper
- Bring to boil, then simmer until potato is soft
- Blend (hand blenders work well for this)
- Add a little more stock if it's too thick (or add some milk for a creamy soup)
- Add seasoning to taste
