Leek and Potato Soup

This deliciously simple soup serves about 3 people.

  1. Finely slice leeks and potatoes
  2. Soften leeks and potatos in saucepan on low heat with butter
  3. Add chicken stock, curry powder and pepper
  4. Bring to boil, then simmer until potato is soft
  5. Blend (hand blenders work well for this)
  6. Add a little more stock if it's too thick (or add some milk for a creamy soup)
  7. Add seasoning to taste
