Crispy tofu bao buns

Recipe is for tofu but the same sauce can be used for meats (beef or salmon)

make enough for 3 serves

Tofu is best cut up and left to dry out for a few hours before cooking

  1. mix the soy, ginger, sugar, garlic and tom sauce. Put aside until the end.
  2. cut the tofu into cubes or chunks, but keep less than 2cm thick. Leave to dry for a few hours.
  3. toss the tofu in cornflour.
  4. heat up a pan, add oil and heat until shimmering. Add tofu pieces and leave untouched until they are browned. Then turn onto each side to brown up all over. You may need to do this in batches.

  6. prep other veggies and side dishes.
  7. once all tofu chunks are brown, turn off the heat and add the sauce with a few splashes of water. Turn the tofu in the sauce to cover.
  8. serve with rice, veggies and bao buns!
