Chocolate sheet cake

Uses a soft, pourable batter baked in a 9x13-inch pan. recipe can be scaled up to a larger plan but increase cooking time by 10-15mins (cover with foil if top is starting to burn).

Preheat oven to 350F and grease a 9x13-inch baking pan (line with parchment if desired). Sift together flour, sugar, cocoa powder, baking soda, baking powder, and salt in a large bowl. In a separate bowl, whisk together buttermilk, sour cream, eggs, vegetable oil, and vanilla extract. Slowly whisk hot coffee into the wet mixture. Pour wet ingredients into dry ingredients and whisk until just combined with no streaks of flour. Pour batter into prepared pan and spread evenly. Bake for 45–50 minutes or until the centre springs back when lightly pressed. Allow cake to cool completely in the pan.
