Almond layer

  1. Beat egg whites until firm peaks form.
  2. Gradually beat in sifted icing sugar
  3. Fold in lightly beaten egg yolks.
  4. Beat cream with almond essences until soft peaks form
  5. Fold the cream and egg mixtures together.
  6. Place in freezer.

Chocolate layer

  1. Beat egg whites until firm peaks form.
  2. Gradually beat in sifted icing sugar
  3. Whip cream until soft peaks form.
  4. Fold in egg white mixture.
  5. Melt chocolate and the stir in the egg yolk
  6. Combine cocoa and water and stir into the chocolate mixture
  7. Stir chocolate through the cream mixture.
  8. Spread over the frozen almond layer and place in the freezer.

Vanilla layer

  1. Beat egg white until soft peaks form.
  2. Gradually add in sifted icing sugar
  3. Beat cream and vanilla until soft peaks form.
  4. Add in fruit r lollies, if desired and combine the cream and egg mixture
  5. Spread over the frozen chocolate layer and place in the freezer.
