Cassata
Almond layer
- Beat egg whites until firm peaks form.
- Gradually beat in sifted icing sugar
- Fold in lightly beaten egg yolks.
- Beat cream with almond essences until soft peaks form
- Fold the cream and egg mixtures together.
- Place in freezer.
Chocolate layer
- Beat egg whites until firm peaks form.
- Gradually beat in sifted icing sugar
- Whip cream until soft peaks form.
- Fold in egg white mixture.
- Melt chocolate and the stir in the egg yolk
- Combine cocoa and water and stir into the chocolate mixture
- Stir chocolate through the cream mixture.
- Spread over the frozen almond layer and place in the freezer.
Vanilla layer
- Beat egg white until soft peaks form.
- Gradually add in sifted icing sugar
- Beat cream and vanilla until soft peaks form.
- Add in fruit r lollies, if desired and combine the cream and egg mixture
- Spread over the frozen chocolate layer and place in the freezer.
